Christmas Cookies Weekend Recipe - Christmas Island Coconut Macaroons

Instructions

Ingredients

·       1 14-oz package flaked coconut

·       ¼ cup flour

·       1 14oz can sweetened condensed milk

·       2 tsp vanilla or almond extract

 

Instructions

1.    Preheat oven to 325°.  Grease baking sheets, or line with baking parchment.

2.    In a large mixing bowl, combine coconut and flour.

3.    In another bowl, stir together sweetened condensed milk and vanilla or almond extract.

4.    Pour sweetened condensed milk mixture into coconut and flour, stirring until well mixed.

5.    Using an ice cream scoop or 1/8 cup measuring cup, scoop mixture and press lightly to pack well. 

6.    Drop onto parchment-lined or well-greased baking sheets.

7.    Bake 12 to 15 minutes or until lightly browned around the edges.

8.    Immediately remove from baking sheets and cool on racks.  Store loosely covered at room temperature.
